Time to Celebrate Cinco de Mayo!

Cinco De Mayo

Today is May 5, or Cinco de Mayo, celebrating a Mexican victory in the Battle of Puebla that took place between the Mexicans and the French in 1862.  It is a common misconception that Cinco de Mayo is the anniversary of Mexico’s Independence, but that is actually in September.  This victory resulted in immense national pride and unity in Mexico since about 4,500 ill-equipped Mexican soldiers were able to defeat up to 8,000 French soldiers!

Cinco de Mayo celebrations are becoming very popular in the United States as well, with families learning about Mexican culture and traditions through food, music, dancing, and art.  This site has some Cinco de Mayo recipes that look fantastic! If any of you try and recreate them, let us know how it went.  Here’s our favorite one—nacho cupcakes:

For those of you in your scrubs working today, are you celebrating at work with any Mexican inspired foods? Or maybe you decided to wear a combination of green, white, or red uniforms to look like the Mexican flag!
